Rum [ruhm] is a distilled alcoholic beverage made from sugarcane byproducts, such as molasses, or directly from sugarcane juice, by a process of fermentation and distillation. The distillate, a clear liquid, is then usually aged in oak barrels.

Bacardi Gold rum is manufactured in Puerto Rico where it is distilled from fermented molasses. It is then filtered through charcoal and aged in charred oak barrels for between 1 and 2 years. Unlike Bacardi Superior, Bacardi Gold is only filtered once.

Don Q Cristal
Unlike most clear rums, Don Q uses a multiple distillation system to produce a cleaner, more refined, and more delicate flavor profile. So a Don Q drink will sip smoother than a drink made with another rum. So smooth, in fact, that you can substitute Cristal in a vodka drink, and most won’t be able to tell the difference. It’s then aged for 1 1/2 to 5 years in American White Oak barrels to impart a touch more smoothness. Try it. You’ll see.

Gosling’s Black Seal 150 Proof
An overproof version of Gosling’s iconic Black Seal rum, famous the world over for having copyrighted the Dark ‘N’ Stormy cocktail. 151 refers to the strength in US proof, which equates to 75.5% alcohol by volume, so please use this one responsibly – ie very sparingly – and don’t drink it neat.

Gosling’s Black Seal Family Reserve
A truly superb dark golden rum made in Bermuda by Gosling’s, who are of course much more famous for their Black Seal rum of Dark ‘N’ Stormy fame. To overlook this complex sipper would be a mistake, however – we think it’s a hidden gem.
The Hamilton Jamaican Pot Still Black Rum shows a dark brown color, the color of finely polished black walnut wood. The Gold rum is colored by using less of a slightly different caramel to achieve its pale straw color. As I swirl the rum of both hues in my tasting glasses, I’m seeing some of the most prolific legs of any rum I have ever sampled.

Kirk and Sweeney 12 Year Old Rum is a rum crafted in the Dominican Republic from raw sugarcane. After being distilled, the rum is aged for twelve years in American oak casks. As a result, it has deep mahogany.

The opening aroma is marvelously beany and grassy; later, sweetish flavors of dark caramel, chimney soot, and dark, old honey make scrumptious inhaling. The palate entry is honeyed, warm, and cocoa-like; at midpalate the grassy, weedy, cane-like taste balances the honeyed sweetness. Concludes cocoa-like, intense yet smooth, and memorably sweet.
Opthimus 15 Year
Its appearance as a very old cognac or brandy, its exquisite aroma and pungent is product of the complexities of alcohol and very mature malts. Its contemporary style makes his presence on the palate as flexible and friendly. It is full and deep, long breath. A lavish rum.
Optimus 25 Year
This contemporary rum, distinctive and vigorous, with a stunning mahogany color, and a termination in Port casks, can only be described as exquisite, in palate and aftertaste, reminiscing pepper. Memorable and delicious rum due to its smooth flavors.
Pilar 3 Year
Extremely Smooth, creamy in fact. Pilar Blonde is just that, not colorless, but pale beige or straw-like. Appearance wise, there is a surprisingly large quantity of legs, which form and run quickly, leaving behind pearl drops at the upper reach of the swirl’s film. The bouquet is slightly floral, refined and sugary sweet with a faint dried tobacco leaf undertone that segues to sprightly plant aromas like the oily zest from citrus fruits (lemon, grapefruit and orange) then pineapple, coffee bean and grassy herbal tea.
A Mauritian rum blended with vanilla, nutmeg and other tropical spices, and named after the rare Pink Pigeon – another native of Mauritius, brought close to extinction in the 90s but now flapping around again in much healthier numbers. Made at the Medine Estate through a partnership between The Indian Ocean Rum company and our friends at Berry Brothers & Rudd.
The Initial taste reflects the complex aromas, especially enhancing the charred wood, brown sugar, and anise flavors. It’s more subtle tasting than many aged agricoles, and further influenced by Plantation’s signature sweetening and cognac aging. A medium-heavy body delivers flavors by the truckload in perfect preamble to the densely sweet finish.
Intense and highly aromatic as a result of long fermentation and pot-still distillation, Plantation Jamaica is faithful to its origins. A lovely mahogany colour, it reveals a wide range of exotic aromas on the nose, with marked notes of pineapple, cooked mango, clove and nutmeg. Gold: Premium aged in oak barrels, Port Royal Gold is an exceptionally smooth coloured rum with a full-bodied bouquet. The Gold will add a touch of Glass to your mixed drinks.
Private Stock: Prichard’s Private Stock Rum has been ultra aged in charred oak barrels. This process makes it the most exclusive product we create. Private Stock Rum has a chance to truly mature and develop a very rich complexity. Due to its age, each barrel of Private Stock Rum only retains one-third of its original volume, yielding a hefty angel’s share.
Barrel Proof: Prichard’s Fine rum is the flagship rum from the Tennessee distillery aged 3 to 5 years.Prichard’s rums are made from American-made molasses harvested and produced in Louisiana. The molasses is distilled in traditional copper pot stills in batches at the distillery in Tennessee and aged in new oak barrels.
Crystal: Prichard’s Crystal Rum is made with the finest grade “A” molasses. Even if you are not accustomed to drinking rum straight, you may find Prichard’s Crystal Rum to be quite refreshing. The clean, smooth finish, makes Prichard’s Crystal Rum a perfect spirit for today’s artisan cocktails.

Gold: Very Smooth. Rhum J.M Gold developed its light amber color from the time it spent aging in new American oak barrels. On the nose, aromas of fresh cut cane with a hint of light sweet vanilla is discerned. As the rhum opens up some spiciness and mild alcohol arrives. Initial taste delivers warmth up front with a spicy edginess and flavors of pepper, allspice, vanilla, and anise. Possessing a medium to light body J.M VSOP finishes long, dry, and warm with hints of unsweetened cocoa, a slight residual sweet cane flavor and fading with spices.
VSOP: The glorious J.M V.S.O.P. is created by aging rhum 3 years in re-charred Bourbon barrels and finishing the rhum an additional year in lightly toasted new American oak barrels and finally reduced to 43 % ABV with pure volcanic spring water from Habitation Bellevue to create an extraordinary aged rhum that retains qualities of the natural terroir and sugarcane of Habitation Bellevue. Expect to find nougaty richness with cinnamon and clove aromas, flavors of spiced butter and lemony toffee, which leads into a smooth and subtle finish.
XO: Aged 100% in re-charred Bourbon barrels, the elegant copper tone precedes a gorgeous rhum on the palate. It has a generous bouquet of toasted nut, lemon and sage on the nose, which compliments the chewy sweet cake as well as the mango and passion fruit flavors. The experience is accented by white pepper, cinnamon and nutmeg.
Blanco: Aromas of coconut and cream cappuccino, and followed by a round entry to a semi dry body with good depth and a touch of sweets, mint and spicy walnuts at the end. A flavorful and aromatic easy tasting rum.
Anejo: Perfect blend of the finest dominican rums of high aging matured naturally in oak barrels with previous use in bourbon, resulting of a rum with an unique bouquet.
Ron Sel Barrilito 2 Star
A beautiful medium yellow gold color leads into light but very distinctive aromas of nuts, molasses and wood with a light peppery alcohol bite. The aromas carry well onto the tongue with a medium body and a nice warm, dryish finish.
Ron Sel Barrilito 3 Star
This really is the bigger, older brother to the Ron del Barrilito Two Star. The aromas are much more pronounced and complex. Nuts and molasses are intertwined with fresh mushroom and black truffle notes. The charred barrels leave a nice mark with a smokey tinge. There is something almost organic to the aroma also.
Ron Zacapa 23 Year
An awesome rum – winner of a Platinum medal and ranked in First Place by the prestigious Beverage Testing Institute in Chicago, with a whopping 97 points. Interestingly, now that industry giants Diageo are distributing Zacapa, the ’23 years old’ age statement has suddenly been dropped and replaced with a somewhat more plausible claim – the rums used are aged between 6 and 23 years old and are blended together in a solera.

At Hacienda Santa Teresa we could’ve opted for not aging every single one of our rums in American white oak and French limousin oak barrels for more than 25 years or not using our Solera System. But had we gone that route,
our life wouldn’t be as fun and our rum wouldn’t be as great.
Seven Fathoms Cayman Islands
Seven Fathoms is a golden rum from the Cayman Islands. The casks are kept under water for part of the maturation process.

Wray & Nephew Overproof
The nose is fruity. Notes of molasses and spice. The palate is fruity and a little spirity. There are notes of banana and Demerara as well as spice and a little oak. The finish is long and spiced.
Zafra 21 Year
Named after the Spanish term for the sugar cane harvest, Zafra Master Reserve is a premium Panamanian rum produced using a small columm still and matured for at least 21 years in casks that formerly held bourbon. Blended by a former maestro ronero for Havana Club, Zafra is a pleasingly rich but interestingly dry rum with a perfectly silky mouthfeel and superb balance. Marvellous stuff.
Appleton 21 Year
A well-aged 21 year old Jamaican rum from the Appleton Estate. Following maturation this was blended and married in casks for two years.
