SINGLE MALT WHISKEY

Single malt Scotch is single malt whisky made in Scotland. To be a single malt whisky, the whisky must have been distilled at a single distillery using a pot still distillation process, from a mash of malted grain. In Scotland, the only grain allowed to be used in a single malt whisky is barley. As with any Scotch whisky, a single malt Scotch must be distilled in Scotland and matured in oak casks in Scotland for at least three years. (Most single malts are matured longer.)

Blackadder does not believe in chill-filtering or in colouring whisky. We believe that the purest is the best. Quite simply, Blackadder RAW CASK is every bit a Blackadder whisky but even more so. We use a special bottling process to make sure that each and every bottle of Blackadder RAW CASK contains its own share of the cask sediments as well as of natural oils and fats that might otherwise be left behind when filling a cask strength whisky straight from cask. This ensures the maximum possible natural flavour is in each and every bottle. The only thing we do when bottling is to use a small filter to ensure that splinters of wood from the cask do not inadvertently pass into the bottle.

This Single Barrel expression from The Balvenie has been aged in a 12 years in first fill Bourbon cask of a single distillation. The Balvenie Malt Master hand selects only those casks characterized by sweetness and subtle vanilla oakiness to be bottled as The Balvenie Single Barrel. Each bottling forms a limited edition of no more than 300 hand-numbered bottles drawn from a single cask. No two casks—even of the same type and filled with spirit from the same distillation—will produce an identical single malt, so each bottling is unique and unrepeatable. The Balvenie Single Barrel 12 Year Old is bottled at the higher strength of 47.8% ABV.

The Balvenie DoubleWood is a 12 year old single malt which gains its distinctive character from being matured in two wood types. Over the period of maturation it is transferred from a traditional oak whisky cask to a first fill European oak sherry cask. Each stage lends different qualities to the resulting single malt ~ the traditional casks soften and add character, whilst the sherry wood brings depth and fullness of flavour.

Caribbean Cask has been matured in traditional oak whisky casks for 14 years, and then ‘finished’ in casks that previously held Caribbean rum.

To create the ideal finish, Malt Master David Stewart filled American oak casks with his own blend of select West Indian rums. When he judged the casks to be ready, the rum was replaced with the 14 year old spirit and the wood was put to work adding the final touches.

The result is an exceptional single malt whisky with the traditional smooth, honeyed character of The Balvenie, married with notes of toffee and a hint of fruit, with a warm, lingering finish.

The Balvenie 15 Year Old Single Barrel Sherry Cask is a celebration of the unique and mysterious interaction between oak, spirit and time. This exceptional whisky is matured exclusively in a European oak sherry butt for at least 15 years. And while each cask is subtly different—Malt Master David Stewart hand selects each barrel for its flavor of dried fruits, nuts and spice. No more than 650 hand-numbered bottles are drawn from each sherry butt, making every bottling unique and unrepeatable. The Balvenie 15 Year Old Single Barrel is bottled at a higher strength of 47.8% ABV.

In 2001, a heavily peated batch of barley was distilled at The Balvenie Distillery and was allowed to mature until The Balvenie Malt Master, David Stewart, decided it was time to rejuvenate the maturation process and so the whisky was transferred to newly prepared traditional casks. The casks that had originally held the peated liquid had taken on much of its character and so David decided to experiment by filling them with 17 year old Balvenie for a short period. The result was an intensely peaty whisky. Marrying this liquid with 17 year old Balvenie finished in new American oak casks produced The Balvenie Peated Cask, a complex single malt that is rich and spicy with layers of smokiness.

To craft DoubleWood 17 Year Old, David Stewart, who celebrates his 50th year at The Balvenie in 2012, returned to one of his most celebrated achievements – consecutive maturation in two different types of cask, a process often referred to as ‘cask finishing.’

This technique is at the heart of The Balvenie DoubleWood – it sees the whisky matured first in American oak barrels, which impart soft sweet vanilla notes, before being transferred to European oak sherry casks, where the second cask aging adds rich spicy flavors, depth and fullness of flavor.

An elder sibling to the popular DoubleWood 12 Year Old, this new aged version shares the same DNA and the honeyed, spicy characteristics as the 12 Year Old, but it is distinctly different, with deeper vanilla notes, hints of green apple, creamy toffee and a striking richness and complexity.

Tullibardine is a drop of pure Highland Gold since 1488, that brings to its custodians, a hand crafted, vibrant, Single Malt Scotch Whisky from an independently family owned distillery.

Having been matured in first fill Bourbon barrels, this is a lovely, balanced whisky. It exhibits barley, pear drops and creamy chocolate notes, which develop on the palate with a lingering finish.

To prevent the cloudiness, larger distilleries tend to chill and filter their whisky before bottling it to remove the fats and oils. Since these components add to the complexity of a whisky’s aroma and flavor, Signatory uses an “un-chillfiltering” process to preserve the natural flavor of our Scotches. “Un-chillfiltered” whisky retains much more of the body, flavor and texture in the Scotch whisky.

A 1995 vintage Glen Keith from independent bottler Signatory as part of the Un-Chillfiltered Collection. Distilled on 8 November, it was matured in a pair of hogshead for 19 years before being bottled on 31 March 2015.

Inspired by the pioneering spirit of Sandy Grant Gordon, this historic expression is a recreation of the original 1963 Glenfiddich Straight Malt that started the single malt category.

Our Malt Master, Brian Kinsman, recreated the Original 1963 from our unrivalled collection of aged whiskies with the recipe uncovered from the Glenfiddich family archives.

While most whiskies today mature in oak, sherry casks were more prominent in 1963. The result, then and now, is a spirit contrasting many of our other expressions.

The aroma is floral with the hallmark Glenfiddich pear, followed by lively fruit notes, biscuity with a soft vanilla oakiness and deliciously dry finish.

Cragganmore SIngle Malt Whiskey

Cragganmore was founded in Ballindalloch, Speyside, in 1869 and was the first distillery to take advantage of the railway system for transportation, with its own railway siding on the Strathspey route. The distillery was designed by Charles Cree Doig and the stone used came from the local hill ‘Craggan Mor’ (meaning ‘big rock’) which gave the new distillery its name.

 

Ledaig Single Malt Whiskey

Peaty whisky from Tobermory on the Isle of Mull, named after a previous incarnation of the distillery. Maritime and smoky, this rivals some of the Islay drams for power, and the 10 year old balances the intensity of youth with rounded, well-aged spirit.

 

Bowmore Single Malt Whiskey

Bowmore was the first of Islay’s distilleries to receive a license, springing fully-formed into official existence in 1779. It is likely that the founder of the distillery, one William Simson, had been been distilling in Bowmore since shortly after his arrival in 1766,at a time when Daniel Campbell the Younger (the laird of the island) was expanding the village into the island’s capital.

Old Pulteney has a few distinctive features. Apart from being the most northerly distillery on the Scottish mainland, it is one of the very few remaining urban distilleries -sited, appropriately, in the ‘Pulteneytown’ area of Wick. In the distillery itself, the wash still is extremely unusual in that it is without a swan neck – supposedly the result of emergency surgery after it was discovered that the still was too tall for the building in which it was to be housed. In addition, Old Pulteney is one of only a handful of distilleries still using a worm tub condenser – more unusual still in that it is made out of steel rather than wood.

 

Classic Cask Single Malt Whiskey

The Classic Cask 40 Year Old Rare Scotch Whisky is a 40 year-old whisky that was blended together under the supervision of renowned Master Blenders David Hallgarten and Robert Mendelshon. Together, the pair sourced some of the finest whiskies in Scotland that had already aged for 15 years in a combination of ex-bourbon and ex-sherry casks. Once the whiskies were identified, they were blended together and put back in their original casks for an additional 25 years. After this quarter-century beautyrest, the whiskies were finished for six more months in casks that were previously used to mature Oloroso sherry.
